Between the Curt Trailer Hitch Receiver # CU78FR and Draw-Tite Max-Frame Trailer Hitch Receiver # 76320 - both of which are a fit for your 2021 Ford Explorer- the best option is from Draw-Tite, and there are a couple of reasons for that.
I like the Draw-Tite hitch because it offers a bit better ground clearance than the Curt which is important so the hitch - and especially accessories like bike racks or cargo carriers - won't hit the ground. The Draw-Tite also has a significant advantage in tongue weight capacity, at 900 lbs compared to the Curt's 600 lbs, which speaks to its strength and durability. I have also found the Draw-Tite to always be of really high quality, and it would be the brand I put on my Explorer.
In regards to the wiring harness you asked about, the correct fit for a 2021 Ford Explorer is the T-One Vehicle Wiring Harness # 118599.
I have added links below to a video review as well as an installation for you to check out if you'd like of the Draw-Tite Max-Frame Trailer Hitch Receiver # 76320.
