There are great options that have adjustable height to help you keep the trailer level. You won't want a flat bed style hitch because it would cause the trailer to hit the sides of your truck bed. The first thing you will need is 5th wheel base rails and I recommend the Reese Quick-Install Custom Installation Kit w/ Base Rails for 5th Wheel Trailer Hitches # RP50082-58 which has custom brackets for your truck.

For what you are seeking with the ability to make u-turns easily, I recommend you get standard fixed hitch like # RP30047 and is adjustable between 14-1/2 and 18 inches tall as needed for side rail clearance and level towing. Then get a rotating pin box like a Sidewinder to give you that increased turning clearance. Those pin boxes were designed for short bed trucks but will work with long bed trucks and are specific replacements for your factory pin box on your trailer. You will need to find the number on your pin box and then get the correct replacement. I've linked the page to your options to help.
