If your 2016 Jeep Grand Cherokee isn't equipped with the factory tow package (there isn't already a trailer connector at the rear) then you will need to start with just the 4-Way harness. For this the Tekonsha T-One # 118727 will work perfectly. The custom harness will plug right into factory ports behind the driver and passenger side tail lights and the hot lead will run up to the vehicle's battery for power.
Once you have the 4-Way in place you can use the Wiring Kit # ETBC7 to add the 7-Way (and 4-Way) connectors and install the needed brake controller. This kit includes everything needed to accomplish this. I have attached the written installation instructions below that you can look through.
If you don't yet have a brake controller I recommend considering the Curt Echo # C51180. This is a really great controller and I think it's perfect for your application where a brake controller isn't always needed based on the trailer you're towing. This will plug right into the 7-Way itself at the rear of your Jeep and pair to your smart phone via Bluetooth. This eliminates the need for a separate, permanent unit mounted in the cab (you will use your phone to adjust settings, activate the manual override, etc) and can easily be unplugged and stored away when it's not needed.
I have attached a short video demonstration that you can check out as well.
