I would recommend going with the Hidden Hitch Class III trailer hitch for you 2000 Honda Odyssey. This hitch installs easily, see video link, and will work well for carrying cargo on a cargo carrier.
For a cargo carrier I have two recommendations. First, if you want the folding option like the one you selected, part # C18151, we only have one model that has a long enough shank to fold into the upright position on the Odyssey. The Draw-Tite Folding Cargo Carrier, # 6502, has 7-1/2 inches of clearance when folded and will work on the Odyssey.
If the folding option is not a deal breaker then you could use the larger Curt Carrier you mentioned, and not utilize the folding aspect.
