You have come to the right place. Most every 5th wheel trailer is going to be height adjustable. The Reese Hitch, # RP30928, that you have refereed is height adjustable from 14 inches to 18 inches. On a short bed, 6-1/2 feet, a slider will be required.
There are 2 types of sliders, a round tube slider and a square tube slider. The round tube slider offers 12 inches of travel so I do recommend it over the 10 inches of travel on the square tube sliders.
For your truck I recommend the Reese slider hitch, # RP30075. This hitch has the round tube slider, and it is height adjustable from 14 to 18 inches. It has a gross trailer weight capacity of 16000 pounds and a pin weight capacity of 4,000 pounds.
You will also need an installation kit. For your truck, use # RP50066-58. This is a custom installation kit that requires little drilling.
