The addition of a transmission cooler will absolutely increase the towing performance and longevity of your vehicle's transmission but it will not increase your towing capacity in the eyes of the manufacturer. Therefore, if you do not have the factory trailer towing package then your towing capacity is 2,000 lbs. If you wanted to tow more than this then you would just need to use your best judgement.
For a transmission cooler, I recommend the Derale Series 8000 Plate-Fin Transmission Cooler Kit part # D13504 with the Derale Snap-In Radiator Adapter Fitting for GM part # D13035 as this will provide adequate cooling power for your vehicle's transmission and it comes with everything that you need for installation.
