The Hopkins Plug-In Simple Vehicle Wiring Harness # HM42635 that you referenced is a fit for 2007 - 2014 Jeep Wranglers so for your 2019 Wrangler you will want the Tekonsha T-One # 118786 instead. Hopkins currently doesn't have a wiring option for you (as of May 2019) and we have found the Tekonsha wiring to be the most reliable on the market.
The T-One has the same type of plug-in connectors as the Hopkins that you referenced but it also has a hot lead that you route up to your battery to help protect the OEM wiring on your Wrangler. I have attached a sample installation video of this kit being installed on a 2018 Jeep JL Wrangler Unlimited that you can check out to get an idea of how the install will go.
If you don't already have a trailer hitch then I recommend going with the etrailer.com Hitch # e98856 because it has easy access to the safety chain loops and a matte finish that gives you a rugged look while also helping to hide any scratches or dings that may occur. Attached is an installation video of this on a 2018 JL Wrangler Unlimited you can reference.
To complete your towing setup you also need a ball mount like what comes with the Curt Towing Starter Kit # C45534. This includes a ball mount that has a 2-1/4" drop and a 2" hitch ball pre-installed. It also comes with regular and locking hitch pins as well as a hitch cover for when you aren't towing. I have attached a link to our list of ball mounts and an article you can reference to ensure that the 2-1/4" drop is best for your towing application.
