If your electric trailer jack has a 7-Way built-into it for power, like the Buyers Products # 3370093500, then it is completely acceptable for you to cut off the 7-Way and run the power to the positive terminal on your 12V battery. Instead of running your ground to the negative terminal on your battery though I highly recommend grounding it to the frame on your trailer. This will be a much better ground option that running it to the battery.
You do want to check and make sure that your trailer jack has a fuse or circuit breaker built-in as well. For the jack I mentioned above there is a circuit breaker attached to the head unit right where the wiring appears. This will protect your jack against power surges.
