Trailer Hitch for 2018 Chevy Equinox Diesel
Question:
Needing a Equinox Diesel hitch. It has a tow rating of 1500 pounds yet you are making people buy a hitch with 3 times that capacity! Why no 1 and one quarter hitches for more of a match to this diesel equinox?

The only trailer hitch available that is confirmed to fit your 2018 Chevy Equinox Diesel model is the Draw-Tite Class III # 76217 that you referenced.
As you mentioned in your question, this Class III hitch features a 4,500 pound towing weight capacity. Aftermarket hitches will usually have a higher towing capacity than what the vehicle itself can handle, in part because many custom hitches are designed to fit multiple vehicles (some with higher capacities than others) and also because they are simply tested to higher limits. Regardless of the hitch's capacity though, you will still be limited to the vehicle's capacity if it is lower, such as with the 1,500 pound limit on your Equinox.
The decision not to produce a 1-1/4 inch receiver for your model Equinox is simply up to the hitch manufacturers. They likely determined that the demand for a 2 inch receiver is much larger.
Having an over-rated hitch is not an issue, as it simply provides you with the peace of mind of having a strong, durable hitch that is capable of much more than what you are using it for. More than just offering a higher capacity, a 2 inch receiver also allows the use of many more accessories like bike racks and cargo carriers. The available selection of hitch-mounted accessories that are compatible with smaller 1-1/4 inch receivers is much more limited.
I have attached the installation instructions for this hitch that you can take a look at as well.
