Question:
I just ordered the Hopkins backup camera. Will I need the 25 ft extension cable for my vehicle, 2005 GMC Envoy XL SLT?

The Hopkins Smart Hitch Backup Camera # HM50002 referenced in your question includes a 19 foot, 7 inch long wiring harness and your 2005 GMC Envoy XL SLT measures just a tad over 17 feet in length so most likely you won't need an extension. You will still have over 2 feet of extra wiring to account for the different routes you may need to take with the harness from the camera to the monitor on your vehicle.
If you want to be extra sure you can try measuring the distance from your Envoy's 7-Way at the rear to the location where you think you will mount the monitor. If you do find that you need a bit of extra wiring you should just need the shorter 5 Foot Extension # HM3100504060 and not the 25 Foot # HM3100504061 that you were looking at.
I have attached a short video demonstration on the camera that you can also check out.
