Question:
I have a 2018 BMW X5 M Series that I need a hitch for so I can tow my jet ski, what all would I need to accomplish this?

For your 2018 BMW X5 M Series the hitch I recommend is the custom-fit Curt hitch part # 13077 because it has a 2 inch opening with plenty of capacity for a jet ski trailer and because it has a concealed cross tube which makes it a bit less visible than most hitches. I attached a picture of what the hitch will look like installed as well as an install video for more info as well.
For trailer wiring then I would recommend the ZCI kit part # 119250KIT which will not require any splicing to install. We had the chance to install this kit on a similar 2015 X5 and found it worked well. See the install link for this as well.
Since you wanted to do some towing you'd need something like the etrailer ball mount kit # 989900. It comes with 2 ball mounts; one with a 3/4 inch rise or 2 inch drop and one with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch ball, 2 inch ball, hitch pin with clip, and a storage bag.
If the ball mount kit does not include a ball mount with the right rise or drop to tow the trailer level, check out the link I have included that explains how to measure to choose a ball mount to tow the trailer level.
