For your 2018 Ford Escape, the best option for the ease of install as well as the weight capacity for towing and tongue weight is the Draw-Tite Max-E-Loader Trailer Hitch Receiver - Custom Fit - Class III - 2" # 75758. This hitch is rated for a tongue weight of 675 lbs with or without weight distribution and it is made with a nice glossy black powder coat finish.
If you are using a bike rack or other accessory with this hitch the attached installation video shows the center of the hitch pin is 4 inches behind the outermost part of the rear bumper. Most bike racks and accessories will work just fine with that measurement.
If you will be towing with this hitch, I recommend the Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # C56320 for your wiring harness. This will connect to your factory wiring harness behind each tail light and draw power directly from the battery to protect your vehicle wiring from overdraw. I've attached a video to assist with the installation.
Then I recommend the B&W Tow & Stow 2-Ball Mount # BWTS10035B for an adjustable ball mount compatible with many trailer coupler heights and having a nice clean storage option to protect your shins. If you want more of a basic ball mount, I recommend the etrailer.com Ball Mount Kit for 2" Hitches # 989900 which comes with two ball mount options and two hitch ball options. This kit has a storage bag for the parts when not in use.
