I have a 2000 GMC Sierra extended cab 6.5 foot bed K/2500. With the outboard rails and the custom mounting brackets will a pro series 16k slider model #RP30051 be compatible

With the Reese Quick-Install Custom Outboard Installation Kit w/ Base Rails # RP56007-53 referenced in your question installed on your 2000 Sierra 2500 you will indeed be able to use the Reese 5th Wheel Trailer Hitch # RP30051. This sliding hitch is compatible with the industry standard rails that the Reese Install Kit will provide. It features a 16,000 pound towing capacity and a square-tube slider that will give you 10 inches of front to back travel for cab clearance during tight turns.
