Leaving the key on while Im towing how to keep the battery from running down

When flat-towing a vehicle such as your 2018 Chevy Colorado you can safeguard its battery by installing a Quick Battery Disconnect # RM-766.

I also suggest a Charge Line Kit # RM-156-25 which will work along with the motorhome side kit # RM-156-75 if no charge line is present in your RV. This will deliver a maintenance charge to the towed Colorado while you tow.
