The Ultra-Fab Hitch Mounted Skid Wheels for RVs up to 30' Long - 4" Diameter - Qty 2 # UF48-979015 can absolutely be mounted on the back of a boat trailer. The biggest consideration is the boat trailer frame material because if you have an aluminum frame you will want to make sure to add a layer of rubber protection because the steel hardware does not play well with aluminum and can cause galvanic corrosion due to the dissimilar metals if there isn't a protective layer between them. If you have a steel frame that will not be an issue.
