The Reese M5 Series hitch you referenced is for the Ford trucks, but there is an M5 series hitch and installation kit for your 2011 GMC 3500 HD Dually, and these are the parts I would recommend for towing a fifth-wheel hitch and allowing full use of your truck bed when needed.

The proper installation kit for the 2011 GMC 3500 HD Dually, is the Under-Bed Rail and Installation Kit, # RP30868. I have added a link to the installation instructions for you to review.

Along with the install kit you will need to select a hitch based on the gross weight of the trailer you will be towing. If your trailer will be less than 18,000 pounds, fully loaded and ready to travel, the Reese Elite Series 18 K hitch, # RP30144, would be the correct choice. If you will be towing trailers over 18,000 pounds or might upgrade in the future, the Reese M5 Series 27 K hitch, # RP30922, would be the best choice for your truck.
