For your 2018 Chevy Colorado, I recommend the B&W Tow & Stow 2-Ball Mount - 2" Hitch - 5" Drop, 5-1/2" Rise # BWTS10038B. This ball mount comes with 2 hitch balls one of which is the 1-7/8 inch ball you need. It is adjustable in 1 inch increments so you can make sure your trailer rides level. This hitch also has a really nice stow-away feature for a clean look when not in use. I've attached a video to assist.
I also recommend you use a hitch lock like # e98880 to deter theft and protect your investment.
For a more cost efficient option, you can use the Buyers Products Adjustable Tri-Ball Mount for 2" Hitches # 3371802225. This will also work well to give you adjustability but it won't give you quite the same capacity based on design.
