On your 2005 Honda Odyssey with a Draw-Tite Class III 2 Inch Hitch, part # 75270, the recommended ball mount is the Draw-Tite Ball Mount, part # 2753. It has a 2-3/4 inch rise or a 4 inch drop. You will also need the Pin and Clip, part # PC3, to attach the ball mount to your hitch. The ball mount will use a hitch ball with a 1 inch shank diameter.
The hitch ball size will depend what size coupler is on your trailer. The most common size is a 2 inch hitch ball like the Tow Ready 2 Inch Hitch Ball, part # 19247. Another size would be the 1-7/8 inch ball like the Tow Ready 1-7/8 Inch Hitch Ball, part # 19260.
These parts will give you a common trailer towing setup. I am including a link to a FAQ page on ball mounts.
