will this ramp support my 7900 lb. excursion, or will it bend like the original steel ramp that came with the car trailer

The USA-made Gen-Y Aluminum Loading Ramps # 325-GH-R96 have a combined capacity of 10,000-lbs, well above your actual load of 7900-lbs, so I would expect no issues with loading your Excursion.
The ramps have 20% more capacity than you need and I would consider that a very reasonable safety margin. Each ramp weighs about 50-lbs despite their lightweight aluminum construction so that suggests that a lot of material is used in their fabrication.
I cannot comment on your original ramps since I do not know anything about their design or construction.
