Your 2015 Toyota Highlander Limited is rated to tow up to 5,000 lbs so that boat trailer will be fine. For your hitch receiver, I recommend the Curt Trailer Hitch Receiver # C13200. This is very nice hitch that will allow you to tow your boat and yet not be as noticeable when not towing. Its install is easy with no drilling required. I've attached a video to assist.
For your trailer wiring, I recommend you start with the Curt T-Connector Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # C56217. The connection point for the 4-way tow harness is located behind the interior trim panel in your rear cargo area. Once you've plugged in the converter, insert the included 10-amp fuse into the integrated fuse holder.
Then you will use the Universal Brake Controller Wiring Kit # ETBC7 to give you the wiring, connections, and circuit breakers to work with your trailer's 7-way connection and a brake controller. For your brake controller, I recommend the Tekonsha Prodigy P3 # 90195. This is a proportional controller that has an easy to understand LCD screen and has some excellent preset boost options for ease of use.
For a ball mount, I recommend the Channel Style Adjustable Ball Mount # C45900 which comes with the hitch pin and also 2 hitch ball options. This will allow you to tow your trailer level as the hitch ball is adjustable to meet your needs.
