The Reese Low-Profile 5th Wheel Trailer Hitch # RP30054 referenced in your question is designed for applications just like yours. Its low-profile design allows it to be used on flat bed trucks that feature a higher bed than standard pickup models. In order to install the hitch on your truck, you will likely need to remove the existing gooseneck hitch on your F-250 and then have a ½ inch steel plate welded to the frame by a qualified professional. I have attached the complete written installation instructions on this hitch that you can also look through.
If you want to retain the use of your gooseneck hitch, another option is an adapter like the Convert-A-Ball Cushioned 5th-Wheel-to-Gooseneck Adapter # CAB-C5G. This coupler will bolt to your trailer's king pin and then connects to the gooseneck ball on your truck, eliminating the need for a fifth wheel hitch. It features a 20,000 pound towing capacity and has an adjustable height from 12 inches to 16 inches.
I have attached a couple short video demonstrations on these products that you can also take a look at.
