You could use the Rear View Safety Wireless Hitch Camera # RVS-83112 to monitor your horses, but the camera for the system automatically turns off after 15 minutes to help save the battery. Unless your trip is less than 15 minutes I would look at another system that will stay on for extended periods of time.
For a similar system that has a camera with a longer power life I recommend the Swift Hitch Wireless Camera and Monitor # 04928. The radio frequency can transmit up to a distance of 300' and features a camera that has a 4-hour max life when it is fully charged. If mounts with a magnet just like the Rear View Safety camera does so that feature will not be lost.
The monitor that comes with the system also has a 4-hour max lifespan and has a 2-1/2" (diagonal) LCD screen which is a little smaller than the 3-1/2" Rear View Safety color monitor. Since this monitor doesn't require power from the 12V accessory outlet you can lift the monitor up to eye level when checking on your horses.
Please note that any wireless device that operates on 2.4 GHz (like Bluetooth, GPS, and in-car Internet) can interfere with the reception quality of this wireless camera and monitor system.
I have attached some videos of both systems in action that you can use as a comparison.
