Can a tow hitch assembly be attached to this type of vehicle even though one is not provided?

For your 2011 Ford Explorer XLT, you can absolutely add a trailer hitch receiver. I recommend the Draw-Tite Max-Frame Trailer Hitch Receiver # 76034. I've attached a video of this installation for you. According to the manufacturer, your towing capacity is 2,000 lbs.
For your trailer wiring, I recommend the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # 118540. This T-One connector plugs into your Ford Explorer's wiring harness, which is located beneath the rear of your vehicle, on the passenger's side. There is no cutting or splicing required.
For a ball mount, I recommend the etrailer ball mount kit # 989900. It comes with 2 ball mounts; one with a 3/4 inch rise or 2 inch drop and one with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch ball, 2 inch ball, hitch pin with clip, and a storage bag. I've attached some videos to assist.
