Your 2011 Chevy Equinox has a towing capacity of 1,500 lbs. I recommend weighing your boat, trailer, and motor to find out the total weigh to see if it will fit within your towing capacity. It is possible based on what I find online. I've found 1980 Glastron boats that are 16 foot weighing between 750 and 950 lbs depending on model. From what I can find, your 80hp Mercury motor may be 350 lbs or slightly more, so you would need to be extremely careful with extra cargo, but it does look like it may be possible.
If you don't already have a trailer hitch, I recommend the etrailer # e98865 which is confirmed to fit your Equinox. For wiring, I recommend # 118494 which will plug in behind your tail lights and draw power from your battery. Finally for a ball mount, I recommend kit # 989900 to give you the options for the correct fit for your trailer.
