There are several fits for the vehicle if you're looking to install a hitch for extremely light duty work like a two bike rack or a small cargo carrier. You'll want to check with your owner's manual or manufacturer to confirm your actual weight capacity.
I recommend the Curt Class I, part # C11276. This is rated for 200 pounds tongue weight. Again, verify the actual limits with your manufacturer or owner's manual. I've included our help article about trailer hitch installs, as well as an installation video on a 2014 Toyota Prius V so you can get an idea of what the installation process is like.
When using this with the Prius, you'll want to keep the vehicle from entering electric mode, as this can cause the vehicle to run too hard and damage the synergy drive, reducing the overall lifespan of the vehicle.
For a trailer hitch mounted cargo carrier, I recommend the Curt Cargo Carrier, part # C18145. This is a sturdy carrier that works well with the Prius due to it slight weight and open design.
