The recommended clearance dimensions for 5th wheel towing are indicated on the diagram that I linked for you. Between the bottom of the trailer overhang and the top of the truck bed rails we suggest having no less than 5-inches of clearance to allow for trailer pitch and yaw when you're making a turn while also descending a hilly road.
You can measure your truck's bed-to-rail height to determine the correct height setting (and a compatible choice of hitch) for your specific application. The Curt Q24 hitch # C16545-16021 that fits into the Ram factory prep package offers a height range of 14- to 18-inches.
For more clearance you might consider the 25K B&W Companion hitch # BWRVK3600. Like the Curt Q24 this drops right into the factory pucks in your 3500's bed but it offers a taller stance, with a height range of 17- to 19-inches.
