A good, middle-of-the-road 5th wheel trailer hitch that will work well with your 2016 Chevrolet Silverado 2500 is the Curt A16 5th Wheel Trailer Hitch w/ R16 Slider # C16521. This 5th wheel hitch is rated for 16,000 lbs which gives you 2,500 lbs of equipment to load. It has front-to-back travel of 12 inches and has a height adjustment of 17-1/2" - 21-1/2".
If you think that 2,500 lbs of luggage leeway might be cutting it close due to tanks being filled then you will want to go with the Curt A20 5th Wheel Trailer Hitch w/ R20 Slider # C16541 instead. It has the exact same features as the A16 only it is rated for 20,000 lbs instead of 16,000 lbs.
To be able to use either of these hitches with your truck you will need to install some base rails. I recommend the Curt Custom Fifth Wheel Installation Kit # C16411-204. The custom installation means that it will mount to existing holes in your frame so no drilling will be required.
If you do not already have a 7-Way connector installed in the bed of your Chevy then I also recommend installing the Hopkins Endurance 5th Wheel/Gooseneck 90-Degree Wiring Harness with 7-Pole Plug # 41157 as it will make connecting and disconnecting your trailer much easier.
