From my research the maximum towing capacity for the 2017 GMC Sierra 2500 is 14,500 pounds. It would be best to verify this with GM though.
If you find that the truck can handle the fifth wheel trailer, or you're going to keep the trailer's loaded weight under the truck's capabilities the hitch I recommend is the Curt A16 # C16521. It fits into the factory prep package in the truck using # C16023 and is a sliding hitch that will help with clearance when executing tight turns. It's also the hitch I recommend if you decide to go with the heavier-duty 3500 truck for more towing capacity.
If the trailer you're buying has a Revolution or Sidewinder pin box then you won't want to use a sliding hitch. Instead the pin box will provide the turning clearance and you'll want to use a fixed hitch. The Curt E16 5th Wheel Trailer Hitch for Chevy/GMC Towing Prep Package - Slide Bar Jaw - 16,000 lbs # C16515-16025 also fits into the prep package and will work with the Revolution, though it won't work with a Sidewinder.
I've linked reviews of both hitches for you to take a look at.
