StarCraft does not include their trailer coupler specs on their website, so for your 2016 StarCraft Launch 21FBS you will just need to look at the coupler to find what size ball it requires. Usually this will be stamped into the coupler's metal housing and it will sometimes also appear on a safety sticker on the coupler.
Some trailers can be fitted with a multi-fit coupler that works with more than one ball size, such as # T43397007K, which fits both 1-7/8-inch and 2-inch balls.
When you select a hitch ball for your coupler in addition to matching the ball size you will want to make sure the ball's shank has the correct diameter and length for your ball mount. You also want to choose a hitch ball that has the required weight capacity for the trailer's GVWR.
I linked our main page for hitch balls and you can simply click on the various dimensions you need to find a suitable one. You can also refer to the linked articles for more information on hitch balls.
