It is possible to tow a camper with a 5-1/2 foot bed if equipped properly, which I can help you do.
First thing you will want to do is make sure you find a 5th wheel hitch that is rated properly for your camper. Next with a short bed you will definitely have clearance issues with the truck and camper when making turns so you will want to make sure that you get a hitch that allows for extended travel like the 22-1/2 inch travel that the 13K Hijacker Demco 5th Wheel AutoSlide # DM8550040 provides. I really like the Hijacker's AutoSlide technology because you never have to get in or out of your bed to adjust the hitch from towing to turning, it just automatically takes care of it for you.
The Demco hitch # DM8550040 can be installed as an above the bed kit with # DM8552013-71 on your 2010 GMC Sierra or as an under bed kit in pucks with the # DM8550041 and # DM8551005.
If you want to be absolutely sure that this hitch will fit, you can use the following formula.
(A + B) - C = Clearance
A = Distance from the fifth wheel jaw center to the truck cab
B = Offset used, in your case 22-1/2
C = Width of the nose of the trailer divided by 2.
To adapt your 7-way at the end of your vehilce for a 7-way plug in the bed of your truck, I recommend the Demco # DM8555002.
