The description for the Curt fifth wheel hitch states it comes complete with an installation kit. What additional items would I need for installation on a 2002 Ford F250 66 bed?

In addition to the two components you had looked at, the Curt A20 Fifth Wheel Hitch, # C16541, and # C16443-204, the only other thing I'd recommend is a 7-way for in the bed that way its easier to hook up the electrical connector for your trailer.
If you have a 7-way on your truck, which you more than likely do, you'd want to use the Pollak T-Connector, # PK11893-11932.
