Can a Hitch be Installed Over New Undercoating on a 2015 Mazda CX-9
Question:
can you install this hitch after undercoating has been applied? i will chase the threded holes with a tap first, but what about the sides contact points,

I recommend scraping away the undercoating where a trailer hitch makes contact with the frame on your 2015 Mazda CX-9. Sometimes undercoating can be quite thick and it can cause some fit issues when installing a hitch so it is best just to scrape it away with a small chisel or putty knife (or similar tool).
I have linked a video showing an example installation of hitch # 13575 for you. The recommended ball mount is # C45030 with a 1 inch rise/2-1/4 inch drop. If the ball mount does not have the right rise or drop to tow the trailer level, use the link I have included that explains how to measure to choose a ball mount to tow the trailer level.
If it does work then for a 2 inch ball use # 63845 and for a 2-5/16 inch ball use # 63847. And for trailer wiring use # 118520 to add a 4-Way flat connector to the rear of the vehicle.
