Can you advise if the Atwood 87502 bolt on bracket will work with a Fulton 1200 LB swivel jack?

For a swivel mount for a 1,200 Fulton jack you would need the part # P9012-00 and not the Atwood part that you mentioned.
This is the correct bracket for the swivel 1,200 lb Fulton Jack part # FXP10W0301.
