Why Does Curt Trailer Wiring Harness for 2016 Jeep Cherokee Store in Rear Cargo Area

when installing in the 2016 Jeep Cherokee is there a way to install it to keep the plug wire at the hitch instead of having to run it through the hatch every time I need to use as soon in your video

If you can find a grommeted hole in the rear cargo area of your 2016 Jeep Cherokee you could route the 4-way through that, but you should note that it is actually preferred to keep the trailer wiring stored on the interior of the vehicle.
Having it stored there keeps it protected from corrosion and damage from debris that could be flying around under the vehicle as you are traveling. The thick rubber seal on the rear door frame will protect the wiring as you shut the door on it as well.
