will this Draw-Tite 75121 Class III 2inch fit a 2003 ford escape

For a Class III hitch for a 2003 Escape, I'd recommend the Draw-Tite # 75118. If you'll be towing with your Escape, you'll also need the following to complete your towing system:
Trailer wiring harness, part # 118343
Ball mount, part # AMSC2
1-7/8 inch trailer ball, part # 19260 or 2 inch ball, part # 63845
Trailer hitches are custom designed to be vehicle specific. The # 75121 hitch you referenced is a fit for the Chevy G Series van, and wouldn't fit your Escape.
