Recommendations for Towing a 5th Wheel with a Lifted 2012 Ford F-250
Question:
how tall is the tallest my truck can be to tow a 5th wheel trailer with this kit that will adjust to 21.5 inches out of the bed? does it all depend on the kind of trailer and how tall it is, or is there a standard 60 inches to the top if the tailgate or something like that.

I have good news, there is no standard height for towing with your truck. It all is specific to the trailer's needs that you are wanting to tow.
I recommend finding some level ground to take a few measurements. The first measurement would be from the ground to the bottom of the truck bed floor, this will give you A. The second is from the ground to the bottom of the pin box on the trailer, this will give you B. The difference between A and B is the height you will need when looking at fifth wheel hitches.
It is important to note that some pin boxes on trailers can be adjustable, and depeding on your needs you may be able to adjust your pin box to help accommodate the height needed when selecting the proper 5th wheel hitch for your setup.
If you provide me with those measurements, I would be happy to give you a more specific recommendation for your towing needs.
