Ultimately, you'll want to choose a fifth wheel hitch whose capacity exceeds the fully loaded and ready to tow tongue weight of your fifth wheel.
The Reese # RP30051 is an okay entry-level choice, but the square tube design can give a less than perfect transition when in the maneuvering position.
I'd recommend a round tube hitch that would offer a smoother ride such as the 16K, part # RP30051. A hitch with a round tube will make towing a much more enjoyable experience.
When it comes to an install kit, you can choose between the universal kit, part # RP30035 or a Custom Kit, part # 50043-6008. The Custom kit will take much less time to install and require less drilling.
If you don't already have a 7-way connector installed in your truck bed, you can install one using part # 40167.
I've linked you to install videos for the universal hitch install kit and the wiring.
