Is Trimming Bumper Locator Pin Required to Install Trailer Hitch on 2014 Hyundai Santa Fe

Can you advise the function of the alignment pins and if the cut off wheel is a must for the successful installation?

The locator pin on the 2014 Hyundai Santa Fe is used to get the proper position of the bumper fascia on the vehicle should it have to be removed. It may or may not interfere with the hitch installation. A grinding wheel is not a required tool for # 75776 hitch installation.
The instructions, linked for your reference, state you need a number 2 Phillips head screwdriver, 17mm and 19mm wrenches, and you will need a torque wrench to get the proper torque on the included hardware. If you do not have a torque wrench most auto parts stores loan out tools so you wouldn't have to buy one just for this installation.
If you plan on doing some towing you might be interested in etrailer ball mount kit # 989900. It comes with 2 ball mounts; one with a 3/4 inch rise or 2 inch drop and one with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch ball, 2 inch ball, hitch pin with clip, and a storage bag.
If the ball mount kit does not have the right rise or drop to tow the trailer level, use the link I have included that explains how to measure to choose a ball mount to tow the trailer level.
For trailer wiring, if the Santa Fe came with a factory tow package use # C56332. If it did not come with a factory tow package use # C56184. I have linked videos showing the hitch and wiring harnesses being installed.
