Some couplers can be adjusted so that the wedge will grab the trailer ball more tightly, but since the coupler you're using has no adjustment available, I'd first confirm that you are using the correct trailer ball size for your coupler. The required ball size for the coupler should be stamped into the metal on the top of the coupler. If you were using a 1-7/8 trailer ball with a coupler designed for a 2 inch ball, it would explain why the ball is loose in the coupler. If this is the case, DO NOT tow the trailer until you can get the correct size trailer ball. Your ball should have the size stamped on the top of it. It is imperative that you use the same size ball and coupler together.

If you are using the correct size coupler for the trailer ball you have, it's possible that the coupler is just worn from age, and simply replacing the coupler or the latch kit (if a replacement latch kit is available) would solve your issue.

Did they perhaps put a new security feature in place for attaching ball to hitch - I had to buy a new tongue assembly recently - worked fine off the lot but now I can't get it to attach :(

There haven't been any changes to the etrailer A-Frame Coupler # CA5100B that I'm aware of. Make sure something didn't get caught up underneath the coupler that's preventing it to latch onto the ball. Clean out anything you find and do the same for the hitch ball itself. Let me know if you still have trouble.
