I did take a look at what we have for your Sportrack Hitch N' Drive 700 Deluxe Series, and while we do offer the Locking Knob with Bolt for SportRack Single-Arm, Hitch-Mounted Bike Carriers # SR0018 which does fit your Hitch N' Load bike rack, however the triangular knob you're looking at is not offered as a replacement.

We do have hitches available for campers like your 2019 Coachmen Viking LS Camper. These hitches mount to the frame, so you'll need to take that measurement into consideration.
I recommend the Curt Adjustable Class III, part # C13701. It adjusts from 18" to 51" and mounts to box frames, C-channel frames, or I-beam frames. It has a 2" receiver and can be bolted or welded on. I've linked to a video review of this below.

Hi Matt; it is possible to mount Yakima tracks and a rack on your Flagstaff MAC 176LTD to carry your bikes. Yakima already has a setup for this so based on the size of your camper I recommend the Yakima Aero Bar Roof Rack for Camper Shells # Y67CV.
