If the trailer you plan on towing has brakes on it that would basically mean it's heavy enough that you are going to need to have the brakes operable which does require you to install a brake controller in your 2023 Sprinter.

There are only two ways the # 118747 won't line up on your 2021 Mercedes-Benz GLC. The first is if you have the coupe and not the SUV. The other is if you have the premium package. I reached out to Thule and they still haven't had a chance to test fitment on a 2023. The Thule Elite Van XT # TH302043 has fit the MB Sprinter since 2006 so more than likely it will work with the 2023 model. You're welcome to order it and see if it works I just can't guarantee fitment until Thule gets one in to test.
