Instead you will use the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # 118284 for your trailer wiring. The hands-free liftgate sensors you are referring to on your 2015 Lincoln MKC will still function after you install the Curt # C13194 trailer hitch. What you will likely have to do is simply kick your leg to the side of the hitch receiver instead of the center, but it will still work to open your tailgate.

The tow bar you need to tow your 2017 Lincoln MKC is going to depend on the baseplate you install/have installed. You can mix and match some brands but you'll likely need an adapter if so. All that being said the manual for your vehicle states that front wheel drive models can not be flat towed with all four wheels on the ground so you'll need to dolly tow instead with the front wheels off of the ground.
