It's pretty common that a hitch will have a higher capacity than the vehicle itself. The capacity of your towing system will be limited to the lowest rated component of the system, be it the hitch, the vehicle, the trailer tires, etc.
When a hitch is designed, they are first designed to fit the available space and structure of the vehicle. The hitch capacity follows that design. The testing for capacity is done independently from the vehicle.

The 6-Way is not wired as you think. One is for ground, one is for tail light, one is for R turn/brake, one is for left turn/Brake, one is for trailer brakes, and the last is for either reverse lights or 12V power. The last wire may be omitted if not needed.
A 4-Way has the following wires: White - ground, brown - tail light, green - right brake/turn and yellow - left brake turn.

Yes, you can absolutely pull a 1500 lb trailer with a 2021 Chevy Blazer. Looking at the online owners manual for the Blazer it looks like there is some variance in towing capacity across different models. I was able to find the same information as you in the owners manual for your 2022 Chevrolet Blazer that states the 4 blunt wires behind the headlight switch. I was able to find where one person found the wiring near where the brake pedal mounts(see image).
