If you're talking about the cardboard/plastic cover inside of your Greystone Standard RV Microwave # 324-000106, it is removable but if you remove it you'll need to find a replacement before using the microwave again.

Your Greystone Standard RV Microwave w/ Trim Kit # 324-000105 is going to be likely only held in place by the front trim panel and the 4 screws that attach it to the front of the cabinet. Depending on your cabinet opening and the manufacturer of the RV once you have removed these screws you will either be able to just slide out the microwave from its shelf or you may have to lift the unit off its base if they included risers in the cabinet to get the microwave to the desired height. Typically microwaves are on 20 amp circuit. If it's on a 15 amp you'll most likely have issues with it tripping. I recommend switching to a 20 amp circuit breaker but you will also need to upgrade the wiring running from the breaker to the microwave to # 10-1-1. The shelf can be used in any of the cooking methods and because of the large surface area, you may need to use it for cooking larger items using the convection and combination feature. It looks like there are a couple of regulations depending on area, but most have a range of 13" - 18" between the bottom of the microwave and the top of your stove.
For the Furrion Over the Range RV Convection Microwave, part # FMCM15SS, Furrion states that the top of the microwave be mounted at least 30" above the top of the stove. Since this unit is 15" tall, that means the bottom needs to be 15" above the stove top.
