According to SumoSprings, 6" is the minimum for the # TSS-106-40. I asked them about this and they said you cannot use these if the space is under 6" so unfortunately they won't work for you. Doing so will overload the springs which can cause damage to the trailer and make the ride bouncy instead of smooth.

To run the jack using 110V shore power, you'll need a bench-top type 12-volt power supply which you can easily find online. You'd also need a 7-way socket and pigtail like # 20024. If you choose a power supply with screw terminals on the front of it, the black pigtail wire would connect to the positive terminal and the white pigtail wire to the negative terminal on the power supply.
