What UBolts should I use with this application?

Actually the Ultra-Fab Skid Wheels # UF48-979013 that you referenced installs with it's included hardware and would not require you to come up with U-bolts to install the rollers. If you wanted to use U-bolts you would need to provide your own. To match up to the mounting plate the u-bolt will need to be 3-1/4 inches apart measured on center.
