We offer trailer wiring for the 2011 Ford Escape, both for vehicle's with the factory tow package (in this case part # 118251) and for those without, for which several options are offered; please see the link provided. The no-tow-package harnesses specified are available in both hard-wire types and custom-fit plug-and-play types, all of which install at the Escape tail light assemblies. All provide a 4-pole flat trailer connector.
The custom harness # 118251 works on vehicles without the backup sensor. If your Escape has this feature you instead need to use harness # 118551 which is shown in the linked video being installed on a 2011 Escape. Both of these plug in at the vehicle tail lights. None uses a 8-pin plug.
It is possible you may have found a harness intended for another purpose. It would be helpful to have a photo of your plug. I have linked an article that includes photos of various types of trailer connectors that may be helpful to you.
