Will it hold two 26inch Beach Crusiers and not let them hit the back of the Trailer?

Beach cruiser-style bikes typically have wide handlebars that will almost surely come into contact with some part of the rear of your trailer if mounted on a ladder-mount type rack. For this type of bike a better option may be a bumper-mount rack or a hitch-mount rack.
If your RV has a 4- to 4-1/2-inch continuously-welded steel bumper (not a spot welded or aluminum bumper) then you can use a bumper-mount carrier like the Swagman # S80605. This rack bolts on with included hardware and can fit tire widths up to 2-3/4-inches. It offers the same 75-lb weight capacity as the Surco and has a limited lifetime warranty. I have linked a video on this product for your review. An advantage of this type of carrier is that it can be mounted in whatever position on the bumper that best suits the wheelbase of your bikes. We offer both a cable lock, # e98891, and cam buckle tie-downs # 05605 to secure and stabilize the bikes.
If your trailer has a 2-inch hitch receiver you have the option of using a hitch-mount hanging-style carrier, such as one of those shown on the link provided. For example, the Swagman Original # S64400 offers 4-bike capacity (140-lbs total weight) and would allow extra clearance for your bikes handlebars. With this rack you can use lock # S64030 to both secure the bikes and the carrier.
With any of these options I suggest using the cam buckle tie downs to help stabilize the bikes and rack while you are underway.
