The Curt Hitch # C11391 that you referenced has capacities of 200 lbs tongue weight and 2,000 lbs gross trailer weight. If your 2011 Sea-Doo and trailer fit below those capacities then the hitch would be fine to tow it.
You will need to consult the owners manual of your vehicle to determine what Honda recommends for towing capacities and be sure not to exceed the lower of the two capacities between the hitch and your vehicle. When determining the towing capacity of a setup you should always go with the lowest rated component in your setup as the overall capacity.
