Not all vehicles have 7-way trailer wiring harnesses made for them. This is due to the vehicle being a lighter duty one like your 2019 Subaru Crosstrek which in most cases wouldn't be towing a trailer that has brakes. So this is why only 4-ways are made for your vehicle like the part # 118467 as a custom fit option. So what you can do from there is easily convert to a 7-way with an adapter like the part # 37185.
If your trailer has brakes though you'd need to go a slightly different route as you'd need a brake controller like the Curt Echo Mobile part # C51180. Instead of the # 37185 though you'd instead want the part # ETBC7L which come with the wiring needed to make sure the Echo is active.
